Cooking Line & Oven Transport

Cooking equipment is heavy, hot-side dirty, and often gas-fired, which means the move starts with draining, disconnecting, and sometimes disassembly long before anything rolls.

A commercial cook line is a mix of the densest and the most hazardous equipment in the building: ovens that outweigh everything around them, fryers full of oil, combi units full of water, and gas connections that only a licensed technician is allowed to touch. Getting it out safely is less about muscle and more about doing the prep in the right order.

Deck ovens: heavy, and they come apart

Deck ovens are dense because of their stone baking decks, and a single unit frequently weighs well over a thousand pounds. That weight, combined with a standard doorway, is why deck ovens often have to come apart to clear the opening and then get rebuilt on site. Disassembly is not damage; it is the safe way to move a unit that will not fit through the door in one piece. We plan the teardown and the rebuild as part of the job, not as a surprise on move day.

Combi ovens: drain the water first

A combi oven holds water, and it has to be fully drained before it moves. Residual water left in the unit damages the boiler in transit as it sloshes and sits, and in freezing weather that trapped water can freeze and crack components outright. Draining the combi completely is a required first step, not an optional one, and it is the kind of detail that separates a unit that works on arrival from one that needs a boiler repair before it can be turned on.

Fryers: drained and degreased

Fryers must be drained and degreased before they are loaded. Residual cooking oil is both a spill problem and a safety problem inside a trailer, where it can coat other equipment, migrate into packaging, and turn a deck slick. Draining and cleaning the fryer protects everything sharing the truck and keeps the load safe to handle at both ends. It is straightforward work, but it has to happen before pickup, not after.

Gas is licensed work on both ends

Gas-fired equipment has to be disconnected and capped by a licensed technician before we touch it, and reconnected by a licensed technician at the destination. We do not make or break gas connections. That line is firm for safety and liability reasons, and it shapes the schedule: the disconnect has to be arranged before pickup and the reconnect before the equipment can go back into service. Planning those visits into the timeline keeps the move from stalling on either side.

Hoods and fire suppression

Exhaust hoods and their fire suppression systems are licensed contractor work, and the suppression system must be tagged out before a hood comes down. Suppression lines are charged and tie into the hood, so pulling a hood without the system properly deactivated is dangerous. We coordinate around the licensed contractor rather than working ahead of them, and the tag-out is a prerequisite before any hood removal begins.

Cast iron tops ship strapped to a skid

Cast iron range tops and griddle plates are tough in service but brittle under a sharp impact, and they will crack if dropped on a corner. To keep that from happening, they ship strapped down to a skid so the mass is supported and the edges are protected. Skidding a cast iron top also makes it far easier to move with the right equipment instead of wrestling it by hand.

A cook line moved well comes down to sequence: drain, degrease, disconnect, and disassemble in the right order, with the licensed trades handling gas and suppression. Get the prep right and the heavy lifting is the easy part.
